Cacao Nib Honey

Last week, I was at a beautiful Yoga Retreat and for breakfast, they had a mysterious looking pot next to the home made jams and nut butters.


"What is that"? I thought. It looked like honey but not quite.... I asked the lovely girl working at the retreat and she said it was honey with cacao nibs mixed in.


With no time to waste I hurried over to try this marvellous creation! Have you ever eaten something so suprisinly delicious that your jaw goes a bit weak and it feels like your mouth could fall onto your lap? Yep, that happened.


I'm not a massive fan of cacao nibs sprinkled over yoghurt, fruit etc. etc. I find the aftertaste a little too overpowering. THIS creation on the other hand, was unbelievably delicious!  The honey seemed to soften the aftertaste of the nibs. I enjoyed mine smothered over some fresh bread. Simple pleasures have never been so wonderful.


After returning home, I made my first batch and It was so easy! I literally poured 1/2 bag of cacao nibs into a pot of honey and voila - taste sensation ahoy!


What's even better is knowing that this combo is packed full of anti-oxident and anti-bacterial properties, keeping our immune systems strong and our cells healthy.
